A few years ago, when I was working as a Research Scientist – Product Development at Leatherhead Food Research, I attended the Speciality and Fine Food Fair in search of innovative new products to curate a New Product Exhibition.
I couldn’t keep away from the chocolate producers and the event now has a designated area for fine chocolate complete with a stage for live demos: the Speciality Chocolate Fair.
My Bean-to-Bar Partner-in-Crime, Dom Ramsey, was invited to give a demonstration on Home Bean to Bar Chocolate Production. Since we carried out a Bean to Bar demo together at The Grenada Chocolate Festival 2016, Dom asked me if I would like to join him. Of course, I happily obliged!
